For the dough
For the syrup
For frying
Method
- 1.For the syrup, combine water and sugar in a saucepan and bring to a boil until the sugar dissolves. Add the cinnamon stick and lemon juice, simmer on low heat for 15 minutes, then set aside to cool completely.
- 2.In a separate pot, combine water, butter, sugar, salt, and citric acid, then bring to a boil.
- 3.Once boiling, add the flour all at once and stir vigorously over low heat until a smooth dough forms.
- 4.Remove from heat and allow to cool slightly. Beat in the eggs one at a time until smooth (a mixer can also be used).
- 5.Transfer the dough into a piping bag fitted with a star tip.
- 6.Pipe strips of dough into warm (not hot) oil and fry over medium-low heat until golden and crispy.
- 7.Transfer the fried pastries onto paper towels to drain excess oil, then immediately dip them into the cold syrup for a few minutes before serving.
