Today I want to share with you an ancient Roman spaghetti recipe consisting of only 3 ingredients - Cacio e Pepe (Cheese and Black Pepper). It was one of the recipes I made the most during my student years.
Ingredients
Method
- 1.While heating the ground black pepper in a pan, add the spaghetti to boiling water.
- 2.Shortly after, add some of the pasta water to the pepper and cook for a little while.
- 3.3 minutes before the spaghetti is fully cooked, transfer it to the pepper and mix, adding more pasta water as needed.
- 4.As the spaghetti cooks, gradually add the cheese and stir until it becomes creamy.
- 5.After 4-5 minutes, the spaghetti should be ready. Enjoy!
Notes
- If you can't find Pecorino Romano cheese, you can use Parmigiano Reggiano (Parmesan) or Grana Padano. Try to find high-quality cheese.
- If you grind the black pepper right before adding it to the dish, it will be more aromatic.
- The cooking time for the spaghetti should be written on the packaging; it is important to use high-quality spaghetti.
