For the filling
Method
- 1.Add salt and water as needed to the flour and knead into a dough; cover and let rest for 30–40 minutes.
- 2.Divide the dough into 10 equal portions, shape into balls, and cover again.
- 3.Grind the lamb and onions through a meat grinder, then mix in the salt and black pepper.
- 4.Transfer the minced meat to a pan and pre-cook over medium heat with the lid on just until the color turns pale (do not let the juices evaporate completely so the qutabs remain juicy).
- 5.Roll out the dough balls thinly, place the filling on one half, and fold into crescent shapes.
- 6.Cook the qutabs on a hot dry skillet or saj on both sides until browned.
