For the dough
For the sauce
For the toppings (optional)
Method
- 1.Mix the yeast into the flour; in a separate bowl, dissolve the salt completely in water.
- 2.Add the main portion of flour to the water and mix. Gradually add the remaining flour until dough forms.
- 3.Add the sugar and olive oil, then knead the dough for 20 minutes.
- 4.Cover the dough and let it rest for 20 minutes.
- 5.Divide the dough into 4–6 equal portions, shape into balls, cover, and let ferment for 6–8 hours.
- 6.Combine all sauce ingredients in a bowl and mix thoroughly.
- 7.Stretch each dough ball by hand and place onto parchment paper.
- 8.Spread tomato sauce over the dough, top with shredded mozzarella and toppings of your choice.
- 9.Place a baking sheet upside down in the oven and preheat to the maximum temperature.
- 10.Transfer the pizza on the parchment paper directly onto the preheated hot baking sheet and bake until golden and crisp (about 10 minutes at 275 °C).
Notes
- Salt should not come into direct contact with dry yeast, as it can kill the yeast.
- For the best bake, the oven temperature should be as high as possible.
