For the jam
Method
- 1.Melt the butter in the milk and let it cool to room temperature.
- 2.In a separate bowl, sift and mix the flour, cocoa powder, and baking powder.
- 3.Separate the egg whites from the yolks and beat them in separate bowls with a mixer.
- 4.Before beating the yolks, add 50 g of granulated sugar and the vanilla.
- 5.Beat the egg whites until foamy, then add the remaining sugar (150 g) and continue beating.
- 6.Once the yolks become pale and increase in volume, fold them into the egg whites carefully from bottom to top using a silicone spatula.
- 7.Add the flour and cocoa mixture and fold gently.
- 8.Pour the batter onto a baking sheet lined with parchment paper and bake in a preheated oven at 170°C for about 20 minutes. Check for doneness with a toothpick.
- 9.Once the sponge cake is baked, cover it and let it cool.
- 10.For the jam, bring the strawberries and granulated sugar to a boil over medium heat. Add the cornstarch previously mixed with cold water, and boil for 2-3 minutes.
- 11.Cover the jam with plastic wrap and let it cool.
- 12.Beat the cream cheese, heavy cream, and powdered sugar with a mixer until it reaches a creamy consistency.
- 13.Finally, cut the sponge cake with a 10-12 cm round cutter and assemble the cake.
Notes
- Do not open the oven door during the 20 minutes of baking.
