Cotton-soft beef ribs that fall off the bone with a shiny caramelized glaze.
Ingredients
For the marinade
For the glaze
Method
- 1.Dry the ribs well with paper towels and remove the tough membrane on the back. Make a few cuts along the bone with a knife so the marinade absorbs better.
- 2.In a deep bowl, mix the honey, mustard, soy sauce, mayonnaise, vegetable oil, crushed garlic, and spices.
- 3.Spread the prepared marinade well on all sides of the ribs and massage lightly with your hands to rub it into the meat.
- 4.Cover the ribs and keep them in the refrigerator for at least 4 hours, ideally overnight, so the flavors fully set.
- 5.Wrap the ribs tightly first in parchment paper, then in a double layer of foil. Place in a baking dish and slow-cook in a preheated oven at 140°C for 4 hours. At this stage, the meat becomes very tender.
- 6.Then open the foil and carefully pour off the accumulated juices.
- 7.In a separate bowl, mix the honey and soy sauce to prepare the glaze, and brush this mixture over the ribs.
- 8.Raise the temperature to 220°C and bake the ribs uncovered for an additional 15-20 minutes to get a roasted, shiny crust on top.
- 9.Once ready, remove the ribs from the oven and let them rest for 10-15 minutes so the juices stay inside, then cut and serve.
